Black Bean Burritos have always been a delicious staple of Mexican food because they are so versatile, and thus hearty. Of the many fillings that work, black beans are revered for their robust taste and nutritional profile (high in protein), fitting somewhere between omnivorous leanings. Enter the black bean burrito. Ingredients:
What you need to make the Classic Black Bean Burritos Recipe: 4 servings
For the Classic Black Bean Burritos Recipe Filling:
Rinsed and drained 15 oz can of black beans
1 cup of any rice (white, brown or whatsoever as per your choice)
1 cup of corn (Fresh, Frozen or Canned)
Diced 1 medium onion
2 cloves of garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
Olive oil 1 tablespoon
1 quart (4 cups) of salsa, store-bought or homemade
1 c shredded cheddar, Monterey Jack or blend
Chopped fresh cilantro (optional)
For Assembling:
4 burritos or large flour tortillas (should be whole wheat, but if gluten is a problem for you and others in the home use your ‘usual’ bread of choice)
Salsa, guacamole or sour cream for the table
Instructions:
Step 1: Prepare the Filling
Sauté the Aromatics:
Pour the olive oil into a skillet over medium heat. Pour diced onions and sauté until brown for 5 minutes Add the minced garlic and cook for 1-2 more minutes or, until fragrant.
Add the Beans and Spices:
Pour in the black beans, rice and corn. Pernuteaza cu boia (cumin, chili powder). Salt and pepper to taste 5) Cook the above for 5–7 minutes to get all the flavors sit in. Pour in a little water or veggie broth if the mix looks too dry.
Incorporate Salsa and Cheese:
Take the skillet off of heat and pour in orange salsa. Stir half of the shredded cheese into this mixture if you desire a creamier filling and save other half for layering on top.
Step 2: Assemble the Burritos
Warm the Tortillas:
For easier rolling, heat the tortillas in a dry skillet for about 30 seconds on each side or microwave it for about 15-20 seconds until pliable.
Fill the Tortillas:
Place a warm tortilla on your work surface in front of you. Mound some the black bean mixture in the center of each tortilla, allowing enough room along edges for folding.
Fold and Roll:
Fold the sides of the tortilla toward to middle and start rolling it. Carefully begin to roll the bottom of tortilla over filling, using your hands and tucking as you go. Wrap and roll, Keep rolling until the burrito is sealed in completely. Feel free to place the seam side down if you like, as well.
Step 3: Cook the Burritos
Grill or Pan-Seer:
Place the burritos seam side down in a hot skillet over medium heat;this adds flavor and crunch. Dry age until the crisp is golden about 2-3 minutes per side. You can also employ a panini press for similar results.
Top with Cheese:
For an extra cheesy experience, scatter the remaining cheese on your burrito and for a minute at end of cooking put lid on till it melts.
Step 4: Serve
Once the burritos are crunchy and cheese is melted, take it out of skillet. Wouldn’t these split in half on the bias be beautiful, served with more salsa or guacamole and maybe sour cream? Strain and sprinkle the fresh coriander if you like.
