Ingredients:
1 lb of boneless, skinless chicken breasts
1 cup cornstarch
2 large eggs
2 Cup Vegetable Oil, for frying
Salt and pepper (to taste)
1 or 2 green onions, chopped (for garnish)
Sesame seeds (for garnish)
For the Bang Bang Sauce:
1/2 cup mayonnaise
1/4 cup sweet chili sauce
One to two tablespoons Sriracha more or less, depending on your taste
Rice vinegar or lemon juice, 1 tbsp
1 teaspoon garlic powder
Instructions:
Prepare the Chicken:
Start chopping the chicken breasts into stripes and then bite sized pieces. Salt and pepper the pieces.
Set Up Your Breading Station:
Meanwhile in another bowl; add cornstarch. Meanwhile, whisk the eggs in a different bowl.
Bread the Chicken:
First, dip into cornstarch and space the chicken a little apart here so air can circulate around each piece. Shake off any excess. Then dunk it in the beaten eggs, but continue to allow everything drop apart from the excess egg.
